Batter up!

My husband runs a youth camp in the Sartell area that raises money for the local Legion baseball team. On the second day of camp he puts on a lunch for the kiddos and of course they needed to have cupcakes! My father in law generously donated the cupcakes for the camp! I had a lot of fun making them. They are a little tribute to the Fourth of July as that is quickly coming up around the corner!

They needed 6 dozen cupcakes...it took up most of my kitchen counter!

Red Velvet goodness!

Finally got the chance to create some red velvet cupcakes this weekend for a birthday! I love how simple, but classy this cupcake looks.  It is definitely a classic!

This might be the best combination yet...how can you go wrong with a peanut butter and chocolate combo?  The peanut buttercream is amazing...and the peanut butter filled chocolate cupcake isn't too bad either!


The French Toast cupcake...everything you love about Sunday morning brunch packed into a cupcake.  I even included the mapple syrup, cinnamon and sugar...and topped it off with a dusting of powdered sugar!

Birthday Cupcakes

I had a lot of fun creating cupcakes for a cute little boy who is celebrating his birthday this weekend. It started off with finding a creation that would work well for kids and adults! I ended up going with a sundae cupcake.  All the fun of an ice cream sundae without the actual ice cream.  Here is how they turned out.

I started with a basic chocolate cupcake recipe.



The next step was to fill them with a chocolate ganache...yum...it looked amazing!
Here are the cupcakes after being filled.


Then it was time for the fun part.  I chose to pipe the cupcakes with a Wilton large tip to get the same effect as whipped topping on a sundae...then some sprinkles...a cherry on top...and a miniature spoon!


I can't wait to try them at the party!
